Vanilla Chardonnay

Story
Over the years, while tasting through Chardonnay barrels in our underground cellar, we came upon some barrels displaying the most attractive vanilla notes. Our curiosity led us on a journey, exploring the source of this distinctive vanilla profile, and the seed was sown to capture this enchanting essence in a bottle.

Viticulture and Winemaking
Vines are nestled in broken shale soil and Chardonnay grapes with peachy flavours are selected for good flavour intensity. Carefully selected oak is chosen for the months of maturation. White oak roasted at specific temperatures releases vanillin which marries with the tropical Chardonnay fruit to push the vanilla-like flavours to the front.

Tasting Notes
The colour is pale yellow. On the nose you get a combination of fruits like melon, mango, peach, pineapple and passion-fruit with butterscotch, crème brulee and a distinct note of Vanilla. On the palate you get peaches, a touch of zesty lime and a pleasant, lingering flavour of Vanilla to finish off with.

Cherrychoc Merlot

Story
Instead of providing lengthy descriptions about a multifaceted wine, we decided to simply capture its essence and highlight a prominent characteristic in the name, Cherrychoc. So we created this bold Merlot with a smooth finish with a clear-cut, simple and identifiable label.

Viticulture and Winemaking
Vines are nestled in broken shale rocks on a south-facing slope. The small berries are filled with intense flavours of cherries and mulberries when they enter the cellar. Gentle pressing ensures that we get the best juice and we still make use of the punch down method for colour extraction, while the wine ferments in open fermentation tanks.

Tasting Notes
The colour is deep red. On the nose you get prominent notes of ripe cherries and chocolate. The mid-palate is chunky with intense flavours of cherries, plums, bitter espresso and a pleasant, dry finish of black pepper and dark chocolate.
